Dream Destination: Song Saa Private Island, Cambodia















Australian couple, Rory and Melita Hunter had a vision to enhance the luxury travel offerings in Cambodia, and to do it in a carefully and sustainable way. The islands are connected by foot bridge over a marine reserve - the conservational safeguarding of the island's reefs and marine life which includes dugongs, seahorses and exotic species of fish. At the heart of the intimate Song Saa Private Island experience is a world-class restaurant serving a menu combining old flavours with new, interesting, and rarely discovered ‘Khmer’ ingredient treats with five important elements – salt, scent, raw, heat and sweet; with one of these five qualities defining the core element of each dish. Guests receive daily surprises from the kitchen such as freshly made afternoon tapas and a glass of crisp white wine as the sun sets.

The restaurant is headed up by English born, Executive Chef Neil Wager, who previously worked at the highly acclaimed six-star North Island in the Seychelles, and is used to cooking for international royalty and celebrities. He is committed to paying homage to traditional Khmer food practices in a contemporary and sustainable way - the kitchen operates with locally sourced and grown food, with seafood carefully selected from Cambodia’s evolving community of sustainable fishermen.

Chef Wager has taken a very hands-on approach to designing the menu as a gastronomic journey - with the aim of travelling himself through a variety of different parts of the country in pursuit of only the best suppliers and influences, tasting dishes as he goes, in order to incorporate only the best into each of his creations at Song Saa.
